The food quality today is nothing like the food of 100 years ago, and definitely nothing like the food of 1000 years ago.
In fact, our food quality is lower today than its ever been, with less antioxidants, less vitamins and minerals, less essential fatty-acid, and less phytonutrients. For example, when researchers analysed the nutrient content in conventional produce from 1950’s and compared it to the 1990’s this is what they found:
•15% less iron
•16% less calcium
•20% less vitamin C
•38% less vitamin B2
The title of this lesson – Choose quality over quantity is to remind you that buying better food should take priority over buying more food. As unfortunately, getting the most bang for your buck doesn’t seem to work out so well when it comes to nutrition.

You get what you pay for. Genetically modified food(GMOs) were designed to increase crop yields by being more tolerant to pests and insects, bacteria, poor climate. Less damages crops, means we can grow more food with the same resources, so businesses can lower prices. Sounds good in theory, but many genetically modified species have been shown to seriously harm our gastrointestinal tract.
Our tendency to want more for less has not only left us fatter than even before, but as we’ve stepped away from the bitter tasting produce in favor of the sweet tasting varieties, we’ve weakened our immune systems and increased our risk of degenerative disease.
